A fragrant onion soup in which the onions are slowly cooked until deep brown and fill the whole kitchen with their aroma. We pour over beef stock and serve it with a cheese toast that melts beautifully. It is ready in 35 minutes and anyone can make it.
Heat the butter and oil in a pot. Add the onions and stir them well so that they are coated in the fat. Fry for about five minutes, stirring occasionally.
Then add the garlic and sugar, increase the heat and keep frying until the onions turn a beautiful dark brown.
Pour over the hot stock, season with pepper and simmer for a quarter of an hour over a low heat. Add salt to taste.
Toast the bread dry in a toaster. Sprinkle it with cheese and put it under the grill or into a hot oven for a moment (about two minutes is enough) until the cheese melts and turns a tempting golden colour.
If you pour 150 ml of dry white wine into the soup five minutes before the end, it will be absolutely luxurious!
Serve garnished with the cheese toast as a quick dinner; you can also serve the toast separately.
