A colourful pasta salad that anyone can make. Simply cook the pasta, chop the vegetables and ham, and toss everything with an easy lemon dressing. You can swap the ham for chicken if you like. Let the salad rest in the fridge for a while and serve it with bread rolls.
Make the dressing in a bowl. Mix the oil, salt, pepper and lemon juice or vinegar. Cook the pasta al dente; choose the shape you like best.
Put the drained, cooled pasta in a bowl. Add the ham cut into cubes, the tomatoes cut into chunks, the peppers cut into strips and the peas. Frozen peas are fine – just pour boiling water over them and leave them to drain. Pour the dressing over the salad and mix everything together. Season to taste if needed and leave the salad to rest in the fridge.
Serve the pasta salad with vegetables and ham with bread rolls.
