A fragrant no-bake pie with a crunchy base of butter biscuits and cookies, a smooth cream cheese filling with a hint of coffee, and caramelised pecans on top. This recipe from Markéta Krajčovičová takes about an hour and serves eight. It makes a lovely celebration dessert to enjoy with coffee or on a festive table.
Crush the butter biscuits with a whisk, add the cookies and crush them in the same way. Pour in the lukewarm water and the melted butter and mix everything thoroughly together. Transfer the mixture to a tin lined with baking paper, press it down with a spoon and build up a rim. Put the tin in the fridge to set.
Put the Palouček cheese into a food processor and blend briefly. Add the icing sugar, mix, then add the sour cream. In a bowl, mix the instant coffee with the whipping cream, pour it into the filling and whisk. Spread the filling over the set base so that the rim stays visible.
Dry-roast the whole pecans in a pan, then after a moment add the icing sugar. Once the sugar has melted, lower the heat and spread the still-warm pecans over the filling. Leave to cool for about 10 minutes, then put the pie in the fridge to set.
