Penne pasta with minced pork, mushrooms and garlic in a delicate creamy white wine sauce. The dish is ready in 35 minutes and serves four. All you need at the end is a sprinkle of grated Grana Padano and a little fresh herb.
Chop the garlic and the white part of the spring onions finely and set the green part aside for later. Fry them together with the crumbled minced meat in a preheated pan with a little olive oil, season with salt and pepper. After a while, add the cleaned mushrooms cut into smaller pieces.
Once the ingredients are golden brown, add the tomato purée, stir well and fry everything together for a moment. Pour in the wine and wait until the alcohol evaporates. Add the cream and simmer over a low heat for about 5 minutes. Meanwhile, cook the penne in salted boiling water until al dente (about 10 minutes). Drain them and add to the pan with the sauce. Finally, stir in the finely chopped green part of the spring onions and a few drops of lemon juice.
Serve a portion of the pasta in a deep plate and sprinkle with grated Grana Padano cheese. Before serving, you can garnish it with the chopped green part of the spring onions, basil or parsley.
