Vegetable relishes known as čalamáda are a popular kind of Czech home preserve. This version pairs sliced pickling cucumbers with onion, first left to draw out their juices with salt. They are then covered with a brine of vinegar, oil, sugar and ground pepper and processed in jars. The result is a punchy side dish that tastes just as good cold as it does warmed through.
