A thick, fragrant soup made from stale bread that makes the most of leftovers. Fry the bread in butter with caraway, add vegetables, eggs and dried mushrooms, and cover with water or stock. Finally, season the soup with marjoram, garlic and fresh herbs. It is a simple, hearty dish that will warm you up.
Remove the crusts from the bread and crumble the soft part well.
Cut the vegetables into small cubes.
Melt the butter in a pot and add the breadcrumbs and caraway seeds.
The butter will soak into the bread immediately, so fry it for about 3 minutes, stirring constantly.
Then stir in the eggs and let them set, as if making an egg roux. Add the vegetables, mushrooms, salt and pour in water or stock.
Cook until tender, then add the marjoram and crushed garlic, bring to the boil, and after removing from the heat stir in a handful of fresh herbs (parsley, lovage, chives).
