A stuffed meat pocket looks impressive, yet it is surprisingly easy to make – it just takes a little practice. We fill the chops with a mixture of čabajka sausage, cheese and gently stewed onion, sear them and then braise them in white wine. The result is a juicy dish that even beginners can manage.
Beat the meat, season it with salt and rub it lightly with crushed garlic.
Carefully cut into the edges of the meat, form a pocket and fill it with the prepared mixture.
Fry the finely chopped onion in one tablespoon of oil until translucent, pour in the wine and stew briefly.
Once cooled, add the diced sausage, grated cheese and egg yolk. Stir the mixture, season with pepper and flavour with mustard.
Sew or pin the filled pockets with toothpicks. Sear the meat on both sides in hot oil, then reduce the heat, pour in the rest of the wine and braise until tender.
