Pork in Cream Sauce with Root Vegetables

Slices of pork are seared on lard and simmered with root vegetables, onion and aromatic spices. The meat is then removed, the stock strained and the vegetables blended into a sauce enriched with cream and butter. The finished dish is seasoned with lemon juice and served with dumplings.

Method

01.

Peel the root vegetables and onion and cut them into cubes.

Cut the pork into slices, season with salt and pepper and fry on both sides in lard.

Add the root vegetables, onion, allspice and bay leaf, pour in the stock and simmer until tender.

Remove the meat and strain the stock.

05.

Remove the spices, blend the vegetables, add stock as needed and stir the cream into the sauce. Finally, enrich the sauce with a slice of butter.

Season with lemon juice and, if needed, salt and pepper.

07.

Slice the meat and serve with the sauce and your favourite dumplings.
