Arrange the bacon slices on a board so they partially overlap. Place a preferably long block of meat across them. Season the meat with salt and pepper, spread with mustard and press in the sugar crystals. Roll it up in the bacon slices, always overlapping alternately from the right and from the left. Finally, secure with a needle.

Wrap the meat on all sides so the juices do not leak out. Bake in a slightly preheated oven for 25-35 minutes, depending on the size and type of meat. Your effort with the rolling will be rewarded with beautifully roasted, crispy red bacon and an interesting pork flavour. Serve sliced with rice or boiled potatoes.
