A simple, quick cabbage soup that's perfect on chilly days. The cabbage is fried in butter and oil, thickened with flour and finished with a touch of mace. Serve the finished soup sprinkled with fresh herbs.
Clean the cabbage, cut it into thin strips and add it to a pot with the melted butter and oil to fry. Once the cabbage has wilted, sprinkle it with flour and, stirring constantly, let it fry a little longer. Pour in water, add salt, pepper and mace. Simmer until tender and serve.
Garnish with chopped herbs if you like.
