Roasting duck takes a little more time, but the preparation is fairly simple. Try our recipe for roast duck legs, which cook slowly until tender and golden. Serve them with red cabbage seasoned with vinegar and sugar, and with potato dumplings.
Season the duck legs with salt, caraway seeds and marjoram. Place them in a roasting tin, pour in a little water, cover and roast.
After about half an hour, uncover and continue roasting until the duck is tender and has a golden crust. During roasting, baste it often with the juices.
Sauté the onion in the oil, add the sterilised red cabbage, pour in a little water and simmer for about 20 minutes, until the liquid has almost evaporated. Then sprinkle lightly with plain flour and simmer for a little longer.
Season the cabbage with vinegar and sugar to taste.
