We roast the rabbit in butter with rosemary until tender and serve it with braised red cabbage. Cabbage is one of our favourite home-grown vegetables, and preparing the heads is quick once you know how. The work then goes smoothly and you can handle even a larger amount of heads; spring cabbage can be prepared in the same way.
