Beetroot is a root vegetable known for its vivid red colour and rich flavour. Its mildly sweet taste makes it a popular ingredient in many cuisines around the world, including Czech cooking. In this salad, roasted beetroot and red onion are paired with crisp romaine lettuce, dill and a mild sour cream dressing.
Peel the beetroot and onions and cut them into quarters.
Mix the olive oil, balsamic vinegar, lemon juice, pressed garlic clove, thyme, salt and pepper in a bowl.
Add the beetroot and onion to the dressing and toss to combine.
Transfer the mixture to a baking dish, dot with the butter slices, cover and bake at 220 °C (top and bottom heat) for about 60 minutes. Then leave to cool slightly.
Cut the roasted beetroot into pieces of your choice.
Cut the romaine lettuce into thin strips and arrange on a plate.
Arrange the cut beetroot and onion on the prepared lettuce and pour the beetroot sauce over everything.
Mix the sour cream with the mayonnaise and lemon juice. Season with salt and pepper.
Lightly sprinkle the prepared beetroot and onion salad with torn dill and drizzle with the sour cream dressing.
