Baking on a bed of salt is the simplest way to cook mackerel so that it stays juicy while the skin turns beautifully crisp. We fill the fish with lovage, thyme and lemon, brush them with paprika oil and bake them in a hot oven. The salt forms a firm bed that wraps around the fish and keeps it from drying out. Once baked, simply lift the mackerel out carefully and serve.
