These seared tuna steaks with anchovy butter make four portions of healthy fish. The tuna pairs beautifully with rich anchovy butter and fresh citrus notes. Serve them with rice.
First, prepare the anchovy butter. Finely chop the anchovy slices and spring onions, put them in a bowl and mix thoroughly with the orange zest and softened butter. Add lemon juice and pepper to taste.
Shape the flavoured butter into a roll using baking paper. Close the paper at both ends and place the butter in the freezer for about 15 minutes. Meanwhile, heat a grill pan over high heat and drizzle it lightly with olive oil. Cook the tuna steaks on it, one after another, for 2 minutes on each side (medium) up to 4 minutes (well done). Season the fish with salt and pepper to taste.
Transfer the fish to warmed plates. Top with 2 slices of anchovy butter, orange zest shavings and a sprig of parsley.
