This Italian-style sekaná (Czech meatloaf) combines minced beef with mortadella, mushrooms and marjoram. The mixture is pressed into a loaf tin lined with back bacon and baked until golden. The bacon keeps the meat juicy inside while the top turns nicely crisp.
Line a loaf tin with baking paper and cover the whole base with slices of bacon. In a bowl, mix the minced beef with the bread rolls soaked in milk, the chopped onion, mortadella, eggs, marjoram, salt, pepper, mushrooms and parsley. Press the mixture into the prepared tin and cover the top with the remaining bacon.
Bake in an oven preheated to 160 °C for about 30 minutes, then increase the temperature to 200 °C and bake for a further 20 minutes or so, until a golden crust forms.
