Gingerbread doesn’t have to be just for Christmas – you can bake it with children for Easter too. The dough comes together quickly, needs no chilling, and can be rolled and cut straight away. Once baked, brush the cookies with egg yolk and decorate them with egg white icing however you like.
Put the sifted flour, sifted sugar, baking soda and gingerbread spice into a bowl.
Mix all the dry ingredients together, add the melted lukewarm butter, egg yolks, honey and milk, and work into a dough.
If the dough is still crumbly, add a little more milk.
Do not chill the dough; roll it out straight away to about 0.5 cm thick and cut out shapes.
Bake in a preheated oven at 170 °C for about 8–10 minutes, until the surface turns matte.
Brush the baked cookies immediately with egg yolk mixed with 1 tbsp water.
Decorate with egg white icing as you wish.
