Homemade vareňje is a simple preserve made from sour cherries and sugar, which can be flavoured with brown rum. It is ideal for flavouring teas, grog, pancakes and dessert glasses. Preparation is quick and the hot preserve is filled into clean, dry jars.
Wash the sour cherries, remove the stalks and stones, put them in a saucepan or pot, cover with sugar and simmer over a low heat for about 5 minutes after the sugar has dissolved. Once the pan is off the heat, stir in rum to taste, about 2 dl, if desired and depending on how you plan to use the preserve.
Do not sterilise the vareňje further unless you are used to doing so; in that case, 5 minutes from the moment the water in the pot starts to bubble is enough, with the bottom of the pot lined with a tea towel.
Fill the hot cooked vareňje into clean, dry jars, close them tightly with clean lids, turn them upside down and leave them to cool partially, then turn them back. Store in a dry, dark place and take out as needed.
Use it to flavour teas, grog, pancakes and dessert glasses.
Make vareňje with raspberries, blackberries or blackcurrants as well.
