Pork belly isn't exactly the lightest dish – besides the meat it contains a fair amount of fat, but that's what gives it its unmistakable flavour. In a spicy marinade with chilli, garlic and mustard, the meat absorbs plenty of flavour and after roasting it's tender and juicy. Marinating overnight gives the pork belly a rich taste, and then all you have to do is roast it until golden.
Cut the pork belly into slices about 1 cm thick, lightly flatten them, season with salt and pepper.
Peel the garlic and crush or press it.
Mix all the marinade ingredients together and rub the pork belly slices with the marinade. Cover the bowl with the meat and leave it in the fridge for 24 hours.
The next day, start preheating the oven to 200 °C in good time. Line a baking tray with baking paper.
Lightly grease the prepared tray with oil, place the slices side by side and bake in the preheated oven at 200 °C until tender.
Cover the tray for the first ten minutes if you like, then uncover and finish baking.
