A refreshing vegetable salad that combines the delicate flavour of squash with crunchy red cabbage. The wine and mustard dressing adds juiciness and a pleasant tang. Let it rest for at least an hour and serve as a light side dish or a main course with bread.
Clean the vegetables and peel the onion. Cut the cabbage into thin strips, sprinkle lightly with salt and leave to stand for about an hour so it releases its juice. Coarsely grate the squash and leave it in a colander to drain off excess water. Finely chop the large onion, slice the garlic thinly and mix them together. Drain the cabbage, add the squash and the onion and garlic mixture, and mix everything thoroughly.
Pour the dressing over the mixture. To make the dressing, mix the oil, red wine, mustard, salt and pepper. Season the salad with more salt to taste and leave it to rest for at least an hour in a cool place.
Serve the squash and red cabbage salad as a side dish or as a light main course with bread.
