This beef goulash is a classic of Czech cuisine. Chunks of beef (chuck, shin) are slowly simmered with plenty of onions, sweet paprika, caraway seeds, marjoram and garlic in lard. Beef stock gives the sauce a full flavour, and the goulash is left to stew gently under a lid. Serve it with bread dumplings, bread or beer.
