Tataki is a popular Japanese technique in which fish is seared quickly on the outside while staying raw inside. Try it with a tuna fillet coated in sesame seeds. We recommend serving it with an oyster mushroom salad with carrot, garlic and chilli.
Slice the tuna, season it with salt and pepper and coat it in the sesame seeds. Sear it quickly in a pan with hot oil so that the fish stays raw inside.
Serve it sliced, with an oyster mushroom salad made from oyster mushrooms sautéed in sesame oil with carrot, garlic, soy sauce, spring onion and chilli. Garnish the whole dish with cress sprouts and drizzle with the dressing from the salad. Serve soy sauce alongside.
