Turkey Breast with Air-Dried Ham and Poached Egg

Juicy turkey breast topped with air-dried ham, served on sautéed spinach with cherry tomatoes and finished with a poached egg. It takes just 20 minutes and makes a great quick dinner for two. All you need is a handful of ingredients, one pan and a small saucepan.

Method

Clean the turkey breast of any membrane and rinse it. Cut it into 4 thicker steaks, cover with cling film, gently flatten with a mallet, then season with salt and pepper. Heat a little olive oil in a large pan and fry the turkey steaks until golden. When you fry the steaks on the other side, add the slices of air-dried ham to the pan. Once the ham is fried, place it on the fried turkey breast.

Halve the cherry tomatoes and add them to the pan with the meat. After a moment, add the finely chopped garlic cloves and 1 tbsp of butter. Once the butter has melted, add the spinach, season with pepper and sauté briefly so the spinach softens a little. Take the pan off the heat and let it finish cooking. Finally, drizzle with lemon juice.

Bring water with 1 tbsp of vinegar to the boil in a small saucepan. Stir the boiling water with a spoon to create a whirlpool, crack the eggs into it and cook until soft, about 3-4 minutes.

Serve the sautéed spinach with cherry tomatoes on a plate. Place 2 turkey breast steaks with air-dried ham on the vegetables. Top with the poached egg, cut it open with a knife and season with salt.
