Tyrolean cheese dumplings bring the taste of the Alps straight to your home. This recipe from Roman Paulus shows you how to prepare them with creamed spinach. It serves 4 portions and takes about 60 minutes.
Melt the butter in a heated pan and fry the onion cut into small cubes until translucent. Then pour the milk over it and let it warm up.
Cut the bread, preferably day-old, into cubes, season with salt and pepper, add the chopped flat-leaf parsley and grated cheese, and mix. Then pour the onion and milk mixture over it, add the eggs and flour, mix well and leave to rest for about 10 minutes.
Shape the dough into dumplings – take a little dough with a spoon, work it and form patties. You can wet your hands in water so the dough does not stick. Coat the prepared patties in flour and fry them in a hot pan with oil on both sides until golden brown.
Serve with the creamed spinach and garnish with a sprig of parsley.
In a pan with melted butter, fry the onion cut into larger pieces and the garlic, sliced, for 4–5 minutes. Add the plain flour, and after about 1 minute pour in the milk and cream and simmer for about 10 minutes. Add the squeezed spinach and blend. Season with salt, optionally pepper and nutmeg, and blend again until smooth.
