Boiled beef, known as Tafelspitz, is a Viennese classic that is traditionally served with chive sauce. With this simple method you can make it at home too – all you need is a blender and a few basic ingredients, the most important being white bread, eggs and a good stock. The principle is much like making homemade mayonnaise, so there is nothing to worry about. The sauce goes beautifully with boiled meat or as an original alternative to mayonnaise or tartare sauce.
Boil 3 of the eggs hard (10 minutes in boiling water) and separate the remaining 3 raw eggs into whites and yolks.
Soak the bread in the milk and squeeze it out. Add the hard-boiled eggs, the stock, the mustard, 3 yolks, salt and pepper and blend everything together. Slowly blend the oil into the mixture. Season to taste and finally sprinkle with the chopped chives.
Serve with boiled meat, such as Tafelspitz.
