Zucchini Goulash

A fragrant vegetable goulash made with young zucchini is easy to prepare and tastes wonderful with rice, dumplings or fresh bread. The base is onion softened in fat with ground paprika and goulash seasoning, which give the dish its full flavour. You can also liven it up with mushrooms, tomatoes or a piece of sausage.

Method

01.

Peel the onions and chop them into small cubes.

Clean the young zucchini and cut them into cubes as well, only slightly larger. Chop the parsley finely.

Soften the onion in the fat (oil, butter or lard), sprinkle with ground paprika and goulash seasoning, stir and add the zucchini cut into small cubes.

Dust the mixture with flour and fry briefly. Add a little water and simmer until the zucchini is tender.

05.

Finally, season the goulash with salt and pepper, stir in the yogurt or cream and the chopped parsley, and heat through briefly.

06.

Serve the zucchini goulash with any side dish you like – rice, dumplings or fresh bread all work well.
