The sharp bite of horseradish softens beautifully with apple, a combination that belongs among the Czech culinary classics and was already familiar to our grandmothers. Apple horseradish goes perfectly with roast pork and is an essential part of a Czech pig-slaughter feast, where it is served with boiled pork. You can make it in two ways – with baked or with raw apples.
Bake the apples until soft, peel them, remove the cores and blend into a fine purée. Add freshly grated horseradish (use a fine grater) and mix.
