Made with a tried-and-tested homemade stretched dough, this apple strudel is a real treat. The classic dough is supple and bakes to a beautiful finish. The filling of apples, sugar and cinnamon can be rounded off with raisins or nuts to taste.
For the dough, sift the flour into a bowl and make a well in the centre. In a small bowl, mix the egg, water, oil, salt and lemon juice (or vinegar), pour into the well and work into a supple dough.
If the dough sticks, add a little flour; if it is too dry, add a little water.
Shape the dough into a low round and leave it to rest for at least 30 minutes under a warmed pot.
Wash, peel and core the apples, then grate them coarsely or cut them into slices.
Preheat the oven to 170 °C in good time and line a baking tray with baking paper.
Divide the rested dough into two halves and roll them out one after the other on a floured surface.
Brush each sheet with melted butter, sprinkle with a little breadcrumbs and spread half the apples over it.
Sprinkle the apples with a little sugar and cinnamon, and add raisins or chopped nuts to taste if you like. Sprinkle everything with a little more breadcrumbs.
Roll up the strudels slowly and place them seam-side down on the prepared tray.
Bake in the preheated oven for about 35–45 minutes. Brush the strudels with melted butter during baking and again after taking them out of the oven.
Before slicing, leave the pastry to cool for at least 30 minutes, then dust it with icing sugar.
