This baked pasta comes together in no time and then simply goes into the oven. It freezes well too, so you can pull it out when you need a quick meal. It is also a great way to use up any odds and ends of cheese from the fridge.
Cook the pasta in boiling salted water according to the packet instructions. Preheat the oven to 190 °C, or 170 °C for a fan oven.
For a quick béchamel sauce, put the milk, butter, flour and nutmeg into a saucepan and season well with salt and pepper to taste. Bring to the boil, whisking constantly, and stir until you have a creamy sauce.
Drain the pasta and stir it into the prepared sauce. Season with salt and pepper to taste. Stir in the ham and cheddar and transfer to a baking dish. Crumble the remaining cheeses over the mixture in the dish and stir lightly a few times so that little islands of cheese form.
Mix the nuts and parsley and scatter the mixture over the pasta. Bake for 30 minutes, until the top turns golden and starts to bubble around the edges. Tip: You can make things easier by using a ready-made béchamel sauce, sold for example by Marks & Spencer.
