Do you like easy oven dishes? This pasta is baked with tomatoes and zucchini in a creamy mixture of ricotta, cream and eggs, then topped with hard cheese. Before serving, garnish it with fresh basil. Serve it as a hearty main course that vegetarians will enjoy too.
Cook the pasta in salted water, drain and leave to drip dry. Wash the zucchini and tomatoes thoroughly and slice them. Peel and press the garlic. Preheat the oven to 200 °C.
Grease a baking dish with butter and layer the cooked pasta and slices of tomato and zucchini alternately. Mix the ricotta with the cream, eggs, salt and pepper, then stir in the pressed garlic. Pour the cream mixture over the pasta, sprinkle with grated cheese and drizzle the top with tomato pesto.
Bake for about 45 minutes in the preheated oven until the cheese is golden.
Divide the baked pasta between warmed plates, garnish with fresh basil and serve as a hearty main course that is also suitable for vegetarians.
