Baked pork tenderloin is a festive main course that almost cooks itself. Larded with English bacon and coated in a spice mix, the meat roasts on a bed of potatoes with onion and cream. The result is a juicy roast with a delicate herby flavour – perfect for guests or a special lunch.
Trim the silverskin off the pork tenderloin, lard it with the English bacon and coat it in the spice mix – steak seasoning, pepper and granulated garlic. The easiest way is to tip the spices onto the work surface, mix them and roll the meat in them thoroughly. Then wrap the tenderloin in cling film for a short while.
Slice the potatoes and cut the onion into fine strips. Put everything into a baking dish, sprinkle with salt, thyme and basil, mix and pour over the whipping cream.
Place the meat on top of the potatoes and drizzle with the olive oil. Lay the bacon slices over the meat, put the dish in the oven and bake for about 90 minutes at 220 °C.
Serve immediately.
