Light, tender pork steaks made from lean shoulder blended with cream and eggs. A pinch of nutmeg and grated lemon zest give them a delicate flavour. Simply shape the steaks, arrange them on a lined baking tray and bake until golden.
Line a baking tray with baking paper and preheat the oven to 180 °C.
Trim the meat, cut it into pieces and blend with the cream and eggs.
Combine the mixture with the flour, salt and white pepper, then flavour with nutmeg and grated lemon zest.
Shape the mixture into steaks (wetting your hands with water as you go) and arrange them on the tray. Place in the oven and bake until golden, about 40 minutes.
