Salmon is one of the most popular fish around — easy to find, loved by almost everyone and always looks great. This time we coat it in a crunchy mix of almonds, parsley and Emmental and bake it in the oven. It is ready in 35 minutes and looks like a restaurant dish.
Preheat the oven to 190 °C, or to 170 °C if you are using a fan oven. Season the pieces of fish on all sides with salt and pepper. Grease a baking dish that fits all the fillets side by side thoroughly with butter. Brush the pieces of fish with the remaining butter.
In a bowl, mix the almonds, chopped parsley and grated cheese. Press the mixture carefully onto the fillets.
Put the dish in the oven and bake the fish for about fifteen to twenty minutes. After that time the crust on top should be nicely golden and properly crunchy.
Serve the dish best with boiled potatoes and a green salad, or with stewed vegetables such as broccoli.
