Baked Tarhonya with Bacon, Gothaj Salami and Smoked Cheese

Baked tarhonya with bacon, Gothaj salami, smoked cheese and Niva is a hearty dish baked in one tin. First cook the tarhonya, fry the onion with the bacon and salami, and mix everything with the cheeses and lovage. Pour over the beaten eggs and milk and bake. Serve with refreshing cabbage and carrot salads.

Method

01.

Cook the tarhonya in lightly salted water. Meanwhile, fry the finely chopped onion in sunflower oil until translucent, add the diced English bacon and Gothaj salami and fry together.

Drain the cooked tarhonya in a colander, rinse with cold water and leave to drain.

Cut the Niva and smoked cheese into cubes and chop the lovage finely.

Season the tarhonya with pepper, mix with the English bacon, Gothaj salami and lovage. Add the Niva and smoked cheese and mix.

Spoon the mixture into a loaf tin greased with lard and dusted with breadcrumbs. Pour over the beaten eggs with milk, press the mixture down lightly and bake in a preheated oven for about 45 minutes. Turn out of the tin and portion.

Cabbage salad: shred the cabbage on a coarse grater (we used a 27-year-old food processor), add the dill, drizzle with olive oil and balsamic vinegar and sweeten with sugar. Carrot salad: grate the carrots on a fine grater and the apple on a coarse grater, sprinkle with lemon juice and mix.
