Beetroot carpaccio is a refreshing and colourful starter that combines the sweet taste of beetroot with a tangy balsamic dressing and creamy goat's cheese. All you need are a few ingredients and 15 minutes. Perfect as a light start to a dinner or a healthy snack.
Cook the beetroot in salted water until soft. Once cooled, peel and cut into thin slices, arranging them on small plates. Pour over the dressing made from balsamic vinegar, honey and oil. If desired, add a few drops of lemon juice. Crumble or tear the goat's cheese (or use feta or fresh cheese) over the seasoned beetroot slices and garnish with arugula, torn basil or fresh thyme leaves.
We have found that the combination of beetroot, dressing, basil and Gervais with black pepper works well, but everyone has different tastes and there's no limit to imagination.
