Breadcrumb-Baked Potatoes (Icelandic)

Breadcrumbs have a firm place in our kitchens – we use them in strudels, as a sweet topping, as a binder for meatballs or for coating schnitzels. Try them with potatoes instead: quarters dipped in butter and rolled in seasoned breadcrumbs bake up beautifully crisp. A simple Icelandic side dish that goes well with meat or fish.
