These cabbage bread flatbreads are easy to make and taste wonderful. Sauerkraut, smoked meat and caraway give them an appealing flavour. Serve them with grilled meat or as a side dish that brightens up the plate with its colour.
Making the starter: Mix the water, a little sugar, flour and all the yeast (all from the weighed amounts prepared above) into a starter and leave it to rise for about 20 minutes. Then add the remaining ingredients, knead the dough and leave it to rise in a warm place for approximately 1 hour.
Shaping the flatbreads: Turn the risen dough out onto a floured surface, work it lightly, divide it into 16–20 pieces and press each one out into a flatbread on a baking tray with floured fingers.
Baking the flatbreads: Preheat the oven to 200 °C in good time. Leave the flatbreads to rise, brush them with beaten egg, sprinkle with coarse salt and whole caraway seeds and bake at 200 °C for about 15 minutes.
