This thick carrot and coriander soup is sure to please everyone. Serve it with bread and it makes a satisfying light supper.
Heat the oil in a large saucepan and gently fry the onion for about 5 minutes until soft. Stir in the ground coriander and potato and cook for another minute, stirring. Add the carrots and dried orange peel. Pour in the stock, bring to the boil and reduce the heat. Cover with a lid and simmer for 20 minutes until the carrots are soft.
Remove from the heat, add the coriander and blend until smooth. Season with salt and add orange juice to taste. Serve garnished with coriander.
