Cauliflower Patties with Cheese and Tartar Sauce

Cauliflower patties are great for dinner or as a snack – they taste good hot and cold. Because they are baked on a tray, you can easily make a double batch. Homemade tartar sauce is the icing on the cake.

Method

For the tartar sauce, slice the green part of the spring onions into rings and chop the pickled cucumbers finely. Put the mayonnaise in a bowl, add the cream cheese and mustard and whisk. Stir in the cucumbers and the green part of the spring onions, then season with salt, sugar, pepper and Worcestershire sauce. Mix thoroughly and thin with a little pickle brine if needed. Chill.

Preheat the oven to 200 °C and line a baking tray with baking paper.

Divide the cauliflower into florets and cook in water, or preferably steam, until tender but still firm to the bite. Let it cool, then pulse it coarsely or chop it with a knife (you can also lightly mash it) and mix with the breadcrumbs, egg, cheese, dried garlic and herbs. Season with salt and pepper.

Shape the mixture into patties and place them on the baking tray. Bake for 12–14 minutes until golden.
