Homemade wine sausages will please you all year round, but especially at Christmas. Serve them with mashed potatoes and sauerkraut.
Salt the cubes of beef, mix and leave to rest for about an hour.
Soak the bread rolls in some of the milk. Mince the boneless beef and pork finely together with the bacon and the squeezed bread roll. Then beat with the spices dissolved in the wine, add the remaining milk, cream and wine.
Fill the casings with the smooth mixture. If you do not have casings and a sausage stuffer, you can shape the mixture into rolls, coat them in breadcrumbs and fry them.
Serve the Christmas wine sausages with mashed potatoes and sauerkraut.
