Znojemský guláš is a classic Czech dish with a mildly tangy flavour from pickles. The sauce is thickened with bread crust, and the goulash is served with bread dumplings.
Clean the beef and cut it into cubes. Cut the bacon into small pieces as well. Clean and chop the onion.
Put the bacon in a heated pot and let it release its fat. Add the beef to the melted fat and briefly sear it on all sides. Then push the beef to one side with a wooden spoon, add the chopped onion to the fat and fry until golden brown. Add the sweet paprika, season with salt and cumin, pour in a cup of hot water or stock, cover with a lid and simmer. Stir occasionally and add more water as needed.
When the beef is almost tender, add the pickled cucumbers cut into cubes and the bread crust, either grated or cut into small pieces. The crust will thicken the sauce nicely. Simmer the beef until tender, then season the goulash as needed.
Serve the Znojemský guláš with bread dumplings.
