A quick way with frozen cod fillets: once they have softened a little, we simply coat them in potato starch and spices. Lemon pepper together with ground and whole caraway gives the fish a fresh, distinctive flavour. Serve the fillets with mashed potatoes and a sprinkling of fresh herbs.
Preparing the fillets: Rinse the frozen fish fillets, leave them for about 15 minutes to soften and pat them dry with a kitchen towel.
Seasoning: Rub each piece on both sides with salt, ground caraway and lemon pepper, then lightly dust it with potato starch.
Frying: Heat the clarified butter in a frying pan and add a teaspoon of whole caraway. As soon as it starts to smell fragrant after about a minute, add the fillets and fry them for 8 minutes on each side.
Serving: Serve with mashed potatoes, sprinkled with chopped herbs.
