Cubes of beef shin are first rubbed with wholegrain mustard, salted, peppered and left to rest. They are then braised with onion and smoked pork fat in lard, poured over with dark beer and scented with juniper, allspice, rosemary and thyme. The result is beautifully tender meat in a rich sauce that goes well with bread dumplings or potatoes.
Cut the beef into cubes, season with salt and pepper, stir in the wholegrain mustard and leave to rest for a while.
Meanwhile chop the onion and the smoked pork fat or bacon finely and toss them into hot lard; fry until golden.
Add the beef and let it sear. Pour in the dark beer, add the spices, cover with a lid and let it reduce. Then top up with water or vegetable stock from time to time until the beef is tender.
Thicken with the roux, remove the thyme and rosemary stalks and all the berries, and season with salt or pepper if needed.
