Czech Pork and Beef Baked Meat Rolls with Vegetables and Niva Cheese

Čufty are juicy meat rolls made from pork belly and beef chuck. The meat is first marinated with spices and cream, then minced the next day and shaped into rolls with onion, parsley and egg. The rolls are seared and baked with peppers, tomatoes, thyme and ketchup, then finished with grated Niva cheese.

Method

Cut the prepared meat into thin slices, season with salt and pepper, then add marjoram, grated garlic, ground paprika and cream. Mix well and leave to marinate in the fridge until the next day.

Mince the marinated meat, add finely chopped onion and parsley, the egg and as much breadcrumbs as needed. Mix well again and adjust the seasoning if necessary.

Shape the meat mixture into rolls, pierce them with skewers that have been soaked in water, coat in flour and quickly sear in oil.

Pour a little oil into a baking dish, add the onion cut into half-moons and the peppers and tomatoes cut into slices.

Season lightly with salt and pepper, add sprigs of thyme and place the seared meat rolls on top.

Drizzle lightly with ketchup, pour over a little broth and bake in a preheated oven for about 30-40 minutes. Turn them during baking; before they are done, sprinkle with grated Niva cheese and bake briefly.
