Homemade beer cheese is easy for anyone to make – simply mix quark with spices and light beer and let the mixture mature for a few days. After 5–7 days it develops the typically sharp aroma and flavour that men especially appreciate. Serve it with fresh bread and a chilled beer as a cold meatless supper.
Mix the quark with the salt, paprika, caraway seeds and beer. Pour in the beer gradually so the quark does not become too thin – it should have the consistency of a thick cream.
Place the mixture in a bowl that can be covered with a dessert plate, or in a sealable wide-necked jar. Leave it closed at room temperature to mature for 5–7 days. Serve the finished homemade beer cheese with a slice of fresh bread.
