Making a perfect svíčková sauce is not easy, and plenty can go wrong. Even with careful cooking, the final flavour may not be exactly what you had in mind. Try our pressure-cooker recipe and seasoning tips to help balance the sauce.
Place the rinsed whole beef and the cleaned root vegetables in a pressure cooker. Put all the spices in a tea infuser and close it, so you do not have to fish the berries out of the stock later.
Pour over 800 ml hot water, season lightly with salt, cover with the pressure lid and, from the moment it comes to the boil and the cooker starts to hiss and release steam, cook over a low heat for 40 minutes.
Cool the cooker down, or release the remaining air through the valve, and open it.
Remove all the ingredients from the stock, cut the beef into slices about 2 cm thick and set aside. Mash the vegetables with a fork and return them to the stock.
Mix the plain flour with the cream, pour into the hot stock and simmer for 20 minutes, whisking occasionally.
Then return the sliced beef, add vinegar and salt to taste, simmer for 2 minutes and serve.
Suitable side dishes include various types of bread dumplings.
