Éclair is a delicious French dessert that you can easily make at home. This video guide from chef Roman Paulus will help you make the dough, which is similar to classic choux pastry. You will also learn how to pipe the dough onto a baking sheet with a piping bag and how to bake it correctly. We will leave decorating and finishing for another time.
Bring the water, milk, butter, sugar and a pinch of salt to the boil. Stir in the flour and cook, beating the mixture, until it stops sticking to the wooden spoon. Then remove the dough from the heat and let it cool briefly. Finally, gradually beat in the eggs in a mixer to make choux pastry.
Transfer the prepared dough to a piping bag fitted with a decorative nozzle. Pipe it onto a baking sheet lined with baking paper, dust with icing sugar and bake in an oven preheated to 200 °C for 10 minutes. Then reduce the temperature to 160 °C and bake for a further 35–40 minutes.
Once completely cool, fill the éclairs with various creams and decorate with glazes to taste.
