This fermented vegetable mix brings together cabbage, beetroot, carrot and other vegetables. Once salted and packed into jars, it ferments into a tasty and healthy side dish. Serve it on its own as a salad or alongside other dishes, ideally drizzled with good-quality oil.
Clean all the vegetables and shred them using a food processor.
In a large bowl, mix them with salt, add caraway seeds if you like, and pack the mixture into screw-top preserving jars. Press the vegetables down as much as possible to release all the air.
About 1 cm of pressed-out water should remain above the vegetables. If not, top up with water, close the jars, place them on a baking sheet or tray with a higher rim to catch any escaping juice, and leave them in a warm place to ferment.
The juice inside will start to foam and the lids will bulge. Once they sink back down again, the vegetables are ready. The process takes about 2 days, depending on the room temperature.
Then wash the jars on the outside and put them in a cool place. The vegetables can be eaten as soon as they have fermented, or stored in the cold and taken out gradually. Serve them as a side dish or on their own as a super healthy salad. Just drizzle with good-quality oil.
