Pickling onions are first blanched in boiling water, which makes them easy to peel, then slowly glazed in a pan with thyme, sugar, stock and vinegar. The result is a soft, syrupy sauce that gives the onions both shine and flavour. They make a lovely side dish for meat or for a salad. Serves 4–6.
