Grilled Chicken Hearts on Skewers
Skewers are among the most fun things you can cook on a barbecue – you can thread anything you fancy onto the stick. Chef Roman Paulus brings inspiration in the form of chicken heart skewers. Grilling offal is not all that common, but the results are truly excellent. We will show you how to clean the hearts properly and marinate them in oil, garlic, spices and herbs. Once they have rested, all you have to do is thread them onto a skewer (ideally a metal one) with spring onions and put them on the grill.
